Bush Tomato Dressing



Ingredients:

100 gm Bush tomatoes
75 ml Extra Virgin Olive Oil
10m Tarragon Vinegar



Method:


Blanch bush tomatoes and puree. Mix with the extra virgin olive oil then slowly whisk in the tarragon vinegar and add seasoning.

Serve over antipasto platter with toasted focaccia bruschetta.
